My second venture into the world of L’Imparfait négociant.
Equally as thought provoking as the first , this 2019 Macération is an amber wine comprised of Savagnin, Gewurztraminer, Pinot Gris, and Chardonnay Musqué.
Macération, after which this bottle is named, is the process in which the juice of the grape remains in contact with the skins of the grapes – picking up colour and flavour compounds in the process. The length of macération varied between 11-21 days, depending on varietal.
Spontaneous fermentation ensued, followed by a 10-month hibernation in neutral oak barrels, which allows the wine to breathe and in the process, picking up some additional tertiary flavours and character.
This wine exudes sunny, warm weather . Full of floral notes

marzipan, with some rosemary and savoury edges – great acidity and lengthy finish
